Sesame grilled chicken on sweet potato mash with green beans
Chicken breast fillets (skin off)
Plain or rice flour
Milk or Soya milk
Cut the chicken fillets into 3 pieces. Coat lightly with flour and dip in the milk. Quickly dip in the sesame seeds and coat well.
Place on a grill pan under a hot grill and cook for about 5 minutes on each side until thoroughly cooked.
Meanwhile cook the sweet potato until tender (this usually takes less time than normal potatoes). Mash and add black pepper to taste.
Steam the green beans until they are slightly crisp and serve with the mash and grilled chicken
Courgette, pea & feta frittata

2 tsp olive oil
1 medium onion, finely chopped
1 clove garlic, crushed
1 small courgette, grated and squeezed dry
½ tsp dried dill
5 large eggs
4 small new potatoes, cooked and quartered
50g peas, defrosted
75g feta cheese, cubed
